Ingredients (12 pices):
12cl olive oil (aprox 100gr)
225 gr sugar, plus some extra to sprinkle the muffins.
1 Plain flavored yogurt
5 big spoons of milk
275 gr flour
1 small spoon of sodium bicarbonate (NaHCO3)
70 gr of crushed almonds, other kind of dried fruits or chocolate. Subtract this weight of flour.
Mixer fitted with a whip attachment
Muffin oven tray (see image)
Muffins cups (see image)
Preheat the oven at 180 ºC.
Smooth the oil and the sugar. Add the eggs, the yogurt and the milk and whip it very well again (using the mixer)
In other container, sieve the flour with the sodium bicarbonate and, very slowly, add this mix to the previous one, mixing it well again. It is very important to avoid lump formation.
Optional: Add now the dried fruits or the chocolate and mix again.
Prepare 12 muffin cups in the muffin oven tray and add enough dough to fill ¾ parts of each tin.
Sprinkle a little bit of sugar over each dough for making a crunchy cover over each muffin. Alternatively you can use sliced almond.
Bake the dough during 15-20 minutes. When it has grown enough and looks browned, prick it with a toothpick and if it gets out clean, would it mean that the muffins are baked.
Cool them outside the oven tray or they are going to became damp.Enjoy it!!
